MannaBrew Muffins

Soft, lightly sweet, and naturally energizing

Ingredients (Makes 10–12 muffins):

  • 1 cup brewed MannaBrew (strong and cooled)
  • 1 ½ cups oat flour (or use almond flour for grain-free)
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 ripe bananas, mashed
  • 2 eggs (or flax eggs for vegan)
  • ¼ cup melted coconut oil (or olive oil)
  • ¼ cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (walnuts or pecans—optional)
  • ¼ cup dark chocolate chips or raisins (optional)

 

Instructions:

  1. Preheat oven to 180°C / 350°F and line a muffin tin with paper liners or grease lightly.
  2. Mix dry ingredients: In a large bowl, combine oat flour, baking soda, cinnamon, and salt.
  3. Blend wet ingredients: In another bowl, mix mashed banana, eggs, oil, maple syrup, vanilla, and brewed MannaBrew until smooth.
  4. Combine wet and dry ingredients. Stir until just mixed. Fold in nuts or chocolate if using.
  5. Spoon batter into muffin cups about ¾ full.
  6. Bake for 18–22 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack.
