MannaBrew Muffins

Soft, lightly sweet, and naturally energizing

Ingredients (Makes 10–12 muffins):
- 1 cup brewed MannaBrew (strong and cooled)
- 1 ½ cups oat flour (or use almond flour for grain-free)
- 1 tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- 2 ripe bananas, mashed
- 2 eggs (or flax eggs for vegan)
- ¼ cup melted coconut oil (or olive oil)
- ¼ cup pure maple syrup or honey
- 1 tsp vanilla extract
- ½ cup chopped nuts (walnuts or pecans—optional)
- ¼ cup dark chocolate chips or raisins (optional)
Instructions:
- Preheat oven to 180°C / 350°F and line a muffin tin with paper liners or grease lightly.
- Mix dry ingredients: In a large bowl, combine oat flour, baking soda, cinnamon, and salt.
- Blend wet ingredients: In another bowl, mix mashed banana, eggs, oil, maple syrup, vanilla, and brewed MannaBrew until smooth.
- Combine wet and dry ingredients. Stir until just mixed. Fold in nuts or chocolate if using.
- Spoon batter into muffin cups about ¾ full.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
