MannaBrew Energy Balls

Ingredients (makes ~12 balls):

  • 1 cup rolled oats
  • ½ cup pitted dates (softened if needed)
  • ½ cup nut butter (e.g. almond, peanut, or cashew)
  • 2 tbsp of brewed MannaBrew
  • 2 tbsp honey or maple syrup
  • ¼ cup shredded coconut (optional, plus extra for rolling)
  • 2 tbsp chia seeds or flax seeds (optional for extra fiber)
  • Pinch of sea salt
  • ¼ tsp cinnamon (optional)

 

Instructions:

  1. Prep Dates:
    If your dates are dry, soak them in warm water/MannaBrew for 10 minutes, then drain.
  2. Blend:
    In a food processor, pulse oats, dates, MannaBrew nut butter, and sweetener until a sticky dough forms. Add a splash of water if needed to help it bind.
  3. Add Extras:
    Mix in coconut, seeds, salt, and cinnamon. Pulse a few times to combine.
  4. Roll:
    Scoop out tablespoon-sized portions and roll into balls. Roll each ball in extra shredded coconut if desired.
  5. Chill:
    Place the balls on a tray and refrigerate for at least 30 minutes to firm up.
  6. Enjoy:
    Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
