These no-bake energy balls are rich, naturally sweet, and quietly addictive. Soft Medjool dates get soaked in strong MannaBrew for a deep, almost caramel-like flavour, then blended with nuts, oats, and warm spice into a sticky dough you can roll in minutes. No oven. No nonsense. Just proper, satisfying bites that feel indulgent but are built from real ingredients. Perfect for a quick snack, post-workout fuel, or something sweet with your coffee.

Ingredients

(Makes ±12 balls)

Soaked dates

1 cup pitted Medjool dates

1 cup hot MannaBrew (strong brew)

Dry mix

1 cup rolled oats (or almond flour for low-carb)

½ cup ground almonds/walnuts/pecans

1 tbsp cacao powder (optional)

1 tsp cinnamon

Pinch of sea salt

Bind & finish

1 tbsp coconut oil or almond butter

1 tsp vanilla extract

Optional coatings

Desiccated coconut

Crushed nuts

Cacao powder

Instructions

Step 1: Soak the Dates (the magic)

Brew MannaBrew strong (slightly more concentrated than normal).

Pour hot MannaBrew over the dates.

Cover and soak for 10–15 minutes until soft and infused.

Drain but keep 2–3 tbsp of the soaking liquid.

This is where the caramel depth comes from 

Step 2: Blend

Add soaked dates to a food processor.

Pulse until a thick paste forms.

Add oats/flour, nuts, spices, cacao, salt, vanilla, and coconut oil.

Pulse until sticky but rollable.

Add reserved MannaBrew liquid 1 tbsp at a time if needed.

Step 3: Roll

Roll into bite-sized balls.

Coat if desired.

Chill for 20 minutes to set.
